Spicy Honey-Lime Chicken Thigh Kebabs

Summer kebabs bursting with vibrant flavors: bell pepper, zucchini, and pineapple, glazed with Sriracha and honey.
Ingredients:
  • 0.25 cup honey
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon lime juice
  • 8 large metal skewers
  • 1 pound skinless, boneless chicken thighs, cut into 1 1/2-inch pieces
  • 1 red sweet pepper, cut into 1 1/2-inch pieces
  • 1 medium zucchini, cut into 1 1/2-inch pieces
  • 0.5 small fresh pineapple, cored and cut into 1 1/2-inch pieces
  • 1 medium red onion, cut into 1 1/2-inch chunks
  • 2 tablespoons olive oil
  • salt and freshly ground black pepper to taste
  • 1 pinch garlic powder, or more to taste
  • 1 teaspoon lime zest
Instructions:
  • Prepare the grill outside by heating it to medium-high and lightly oiling the grate.
  • Combine the sweet honey, spicy Sriracha sauce, and zesty lime juice in a small bowl, creating a flavorful mixture. Set aside for later use.
  • Skewer chicken, red pepper, zucchini, pineapple, and red onion in a colorful pattern. Arrange them on a platter. Drizzle with olive oil and generously season with salt, pepper, and garlic powder.
  • Place skewers on the sizzling grill, lower heat to medium, and grill for 15 to 20 minutes, flipping occasionally, until chicken is fully cooked. In the final 2 to 3 minutes, generously coat skewers with glaze to caramelize. Finish by grating lime zest over the top. Serve while still warm.
