Sweet and tangy apricot-lime glazed wings with a hint of Sriracha heat. Customize spice level by adding extra hot sauce.
Ingredients:
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked pepper
  • 3 lb chicken wing drummettes
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1/4 cup honey
  • 2 tablespoons apricot jam
  • 1 tablespoon soy sauce
  • 2 teaspoons fresh lime juice
  • 3 cloves garlic, finely chopped
Instructions:
  • Preheat the oven to 425°F. Cover 2 rimmed baking sheets with heavy-duty foil and spray with cooking spray.
  • In a 1-gallon resealable plastic bag, combine Sriracha sauce, oil, salt, pepper, and drummettes. Seal the bag and shake well to coat. Add flour, seal the bag again, and shake until drummettes are fully coated. Transfer drummettes onto cookie sheets.
  • Bake uncovered for 30 minutes, then flip the drummettes and rotate the cookie sheets. Bake for an additional 20-30 minutes, until the drummettes are golden brown and the juices run clear when the thickest part is cut to the bone (reaching at least 165°F).
  • In a 1-quart saucepan, combine the Glaze ingredients and simmer over medium heat, stirring occasionally, until slightly thickened, approximately 5 minutes. Remove from heat and set aside.
  • Toss the drummettes with the sauce in a large bowl and serve warm.
