Elevate any meal with honey-roasted rhubarb and creamy goat cheese on sweet brioche.
Ingredients:
  • 1 bunch rhubarb, washed, leaves removed, trimmed
  • 14.40 gm honey
  • 4 slices brioche or fruit bread
  • 150g spreadable goat's cheese
  • Honey, extra, to serve
Instructions:
  • Preheat the oven to 180C. Line a baking tray with non-stick baking paper. Cut the rhubarb into 10-12cm lengths and arrange them closely on the tray. Drizzle with honey and bake for 15 minutes until tender. Allow to cool for 15 minutes before serving.
  • Preheat the grill to high. Place the brioche or fruit bread on a baking tray and toast each side for 2-3 minutes or until crisp and golden.
  • Evenly spread the goat cheese on the toasted brioche or fruit bread. Top with the honey-roasted rhubarb and pour over the pan juices. Drizzle with extra honey and serve promptly.
