Honey-Smoked Turkey

Delicious honey-smoked turkey with juicy, moist breast meat and a light honey sauce – guaranteed to be a crowd favorite! No leftovers!
Ingredients:
  • 0.5 pound mesquite wood chips
  • 2 tablespoons chopped fresh sage
  • 2 tablespoons ground black pepper
  • 2 tablespoons celery salt
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons vegetable oil
  • 1 (12 pound) whole turkey
  • 1 (12 ounce) jar honey
Instructions:
  • Heat up the outdoor grill on high. Soak wood chips in water and set them beside the grill.
  • Combine sage, pepper, celery salt, basil, and oil in a bowl and mix well.
  • Prepare the turkey by removing and discarding the neck and giblets. Rinse the turkey, pat it dry, and place it in a large disposable roasting pan. Cover the turkey all over with the herb mixture, then position it breast side down and loosely tent with aluminum foil.
  • Place the roasting pan on the preheated grill, sprinkle a handful of wood chips onto the coals, close the lid, and cook for 1 hour.
  • Add two additional handfuls of soaked wood chips to the fire. Drizzle half of the honey over the turkey and cover it tightly with foil. Cook with the lid closed until fully cooked, about 1 1/2 to 2 hours, or until the internal temperature reaches 165 degrees F (74 degrees C) when measured with an instant-read thermometer near the thigh bone.
  • Continue grilling the turkey uncovered. Remove the foil and gently flip the turkey with the breast side up. Brush the turkey with the remaining honey. Grill for an additional 15 minutes until the honey glaze is beautifully dark.
