Delicious homemade bread featuring whole wheat flour, high-fiber cereal, and honey for a flavorful and rewarding experience.
Ingredients:
  • 2 1/2 to 2 3/4 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon salt
  • 1 package regular or quick* active dry yeast
  • 1 1/2 cups very warm water (120°F to 130°F)
  • 1/4 cup honey
  • 1 tablespoon olive or vegetable oil
  • 1 cup Gold Medal™ whole wheat flour
  • 1 cup Fiber One™ original bran cereal
  • Additional honey, if desired
Instructions:
  • Combine 1 3/4 cups of all-purpose flour, salt, and yeast in a large bowl. Pour in warm water, 1/4 cup honey, and oil. Use an electric mixer on low speed for 1 minute, occasionally scraping the sides of the bowl. Increase speed to medium and beat for another minute, scraping the bowl as needed. Mix in whole wheat flour and cereal. Gradually add the remaining all-purpose flour, 1/4 cup at a time, until the dough is easy to work with.
  • Transfer the dough to a lightly floured surface and gently coat it with flour. Knead for about 10 minutes until smooth and springy. Spray a large bowl with cooking spray, place the dough in the bowl with the greased side up. Cover and allow to rise in a warm place for about 1 1/4 hours or until doubled in size. Dough is ready when an indentation remains when touched.
  • Prepare the cookie sheet by generously spraying it with cooking spray. Use your fist to gently deflate the dough, then shape it into a 9-inch round loaf. Transfer the loaf onto the prepared cookie sheet. Cover it and let it rise in a warm place for about 40 minutes, or until it has doubled in size.
  • Preheat the oven to 350°F. Bake the loaf for 30 to 35 minutes until golden brown and it sounds hollow when tapped. Transfer to a cooling rack and let it cool completely for about 1 hour before slicing. Serve with extra honey on the side.
