Honey butter glazed carrots - ready in just 25 minutes!
Ingredients:
  • 6 medium carrots (3/4 lb), cut into julienne (matchstick-cut) strips
  • 4 medium green onions, sliced (1/4 cup)
  • 1/3 cup honey
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
Instructions:
  • In a large skillet, bring 1 inch of water to a boil (you can add salt if desired). Add the carrots and bring to a boil again. Lower the heat, cover, and simmer for about 5 minutes until the carrots are tender. Remove the carrots from the skillet and set aside after draining.
  • In the same skillet, gently cook the remaining ingredients over low heat, stirring frequently, until they become bubbly. Add the carrots and cook uncovered for 2 to 3 minutes, stirring occasionally, until the carrots are glazed.
