Creamy potato salad with bacon, eggs, and a zesty twist from horseradish dressing.
Ingredients:
  • 2 pounds red potatoes, scrubbed and cubed
  • 0.75 cup sour cream
  • 0.5 cup mayonnaise
  • 0.5 small red onion, chopped
  • 1 rib celery, finely chopped
  • 3 tablespoons white vinegar
  • 2 tablespoons prepared horseradish
  • 1 tablespoon dried parsley
  • 1 teaspoon dried dill weed
  • 1 teaspoon white sugar
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 4 hard-cooked eggs, chopped
  • 4 slices cooked bacon, crumbled
Instructions:
  • In a large pot, cover the potatoes with salted water and bring to a boil. Simmer on medium-low heat until tender, about 20 minutes. Drain and let cool.
  • In a large bowl, combine sour cream, mayonnaise, red onion, celery, vinegar, horseradish, parsley, dill, sugar, salt, and pepper. Add cooled potatoes, then gently mix in eggs and bacon. Chill until ready to serve.
