Asian-style chicken mince dish perfect for the whole family!
Ingredients:
  • 65.63 gm lime juice
  • 21.00 gm soy sauce
  • 10.00 gm caster sugar
  • 1 long red chilli, finely chopped
  • 18.20 gm peanut oil
  • 1 brown onion, thinly sliced
  • 2cm piece fresh ginger, peeled, finely grated
  • 600g chicken mince
  • 1 green capsicum, thinly sliced
  • 150g sugar snap peas, trimmed
  • fresh thick rice noodles, to serve (see note)
  • fresh mint leaves, to serve
Instructions:
  • In a jug, blend fresh lime juice, savory soy sauce, sweet sugar, spicy chili, and 1 tablespoon of chilled water.
  • 1. In a saucepan over medium-high heat, heat oil, sauté onions until softened for 3 to 4 minutes. Stir in garlic and ginger, cook for 1 minute until fragrant. Add the mince and cook for 5 minutes, breaking it up with a wooden spoon until browned.
  • Add vibrant capsicum and crisp sugar snap peas to the pan. Cook for 5 minutes or until the chicken is cooked through and the vegetables are tender. Pour in the zesty lime juice mixture and cook for an additional 2 minutes or until heated through.
  • Ladle savory chicken mixture onto noodles and garnish with fresh mint leaves before presenting.
