Hot baked banana parcels

Ingredients:
  • 50g (2 1/2 tbsp) butter, at room temperature
  • 60g (1/3 cup, lightly packed) brown sugar
  • 80mls (1/3 cup) white rum
  • 2.50 gm ground cinnamon
  • 4 ripe bananas
  • 35g (1/3 cup) flaked almonds, toasted
  • Vanilla ice-cream, to serve
Instructions:
  • Preheat the oven to 200°C. Cut four 30cm square pieces of banana leaves. Boil the banana leaves in a large saucepan of water for 30 seconds, then drain and lay flat on a countertop.
  • In a small mixing bowl, use electric beaters to whip the butter and brown sugar until light and creamy. Mix in the rum and cinnamon until well combined (don't worry if the mixture looks slightly curdled).
  • Peel bananas and cut into 1cm-thick slices. Place banana slices on banana leaves. Drizzle with rum mixture and sprinkle with almonds. Fold banana leaves to make parcels and secure with wet unwaxed string.
  • Arrange parcels on a large baking tray and bake in a preheated oven for 15-20 minutes, or until heated through. Unwrap the parcels and enjoy the aromatic bananas with a scoop of creamy ice cream.
