Try these zesty chipotle deviled eggs for a crowd-pleasing egg dish.
Ingredients:
  • 8 eggs
  • 1/4 cup mayonnaise or salad dressing
  • 1/2 teaspoon lemon juice
  • 2 medium green onions, chopped (2 tablespoons)
  • 2 teaspoons to 1 tablespoon finely chopped chipotle chilies in adobo sauce (from 7-oz can), drained
  • 1/8 teaspoon salt
  • Paprika
Instructions:
  • Place the eggs in a single layer in a 3-quart saucepan and add enough cold water so it is at least 1 inch above the eggs. Bring to a boil, then remove from heat, cover, and let stand for 20 minutes. Drain and rinse with cold water, then let them sit in ice water for 10 minutes.
  • Peel hard-boiled eggs and cut them in half lengthwise. Gently remove the yolks and transfer them to a small bowl. Mash the yolks until smooth, then mix in mayonnaise, lemon juice, onions, chilies, and salt.
  • Generously stuff egg white halves with creamy yolk mixture and dust elegantly with paprika.
