Elevate hot cross buns with decadent apple and pear puddings, topped with luscious butterscotch sauce.
Ingredients:
  • 2 Granny Smith apples, peeled, cored, finely chopped
  • 2 just-ripe pears, peeled, cored, finely chopped
  • 16.00 gm brown sugar
  • 2.50 gm ground cinnamon
  • 4 Hot Cross Buns, thinly sliced crossways
  • 50g butter, melted
  • Vanilla ice-cream, to serve
  • 110g brown sugar
  • 30g butter, chopped
  • 1.20 gm sea salt flakes
Instructions:
  • Preheat your oven to 200C and generously grease four 1-cup (250ml) dariole moulds or ramekins.
  • In a medium saucepan, mix together the apple, pear, sugar, cinnamon, and 2 tablespoons of water. Cook over medium-high heat, stirring occasionally, for about 10 minutes until the fruit is tender and the liquid has reduced. Let it cool slightly before using.
  • Cut discs from 4 bun slices using a 6cm pastry cutter. Brush with melted butter and place buttered-side down in the base of the prepared moulds. Cut discs from another 4 bun slices using an 8cm pastry cutter and set aside. Cut the remaining bun slices into 5cm strips. Brush the strips with melted butter and arrange, slightly overlapping, along the sides of the moulds to cover completely. Spoon in the apple mixture and press down firmly with the back of a spoon. Top with the reserved hot cross bun discs and press down firmly to secure.
  • Place the molds on a baking tray and bake until golden, approximately 25 minutes.
  • To prepare the salted butterscotch sauce, combine sugar, cream, butter, and salt in a saucepan over medium heat. Stir and cook until the sugar dissolves, about 5 minutes. Increase heat to medium-high and continue stirring for 3-5 minutes until the sauce slightly thickens.
  • Gently slide a knife along the edge of each mould to release the puddings. Invert onto plates, then drizzle with salted butterscotch sauce and serve alongside ice cream.
