Hot cross bun creme brulee

Impress guests with a creamy French Easter dessert.
Ingredients:
  • 2 Hot Cross Buns, day-old, coarsely torn
  • 250ml cream
  • 375ml milk
  • 75g caster sugar
  • 4 Free Range Egg yolks
  • 32.00 gm brown sugar
Instructions:
  • 1. Preheat your oven to 160C. 2. Place four 1 cup (250ml) ramekins in a roasting pan. 3. Divide the buns equally among the ramekins.
  • Combine the cream, milk, caster sugar, and egg yolks in a bowl and whisk until smooth. Strain the mixture through a fine sieve into a jug. Pour the mixture over the bun in each ramekin and let it sit for 5 minutes to soak.
  • Fill the roasting pan with enough boiling water to reach halfway up the side of each ramekin. Bake for 30 minutes or until just set. Let cool, then refrigerate for 2 hours to chill.
  • Preheat grill to high heat. Evenly sprinkle brown sugar over the puddings. Grill for 1-2 minutes until sugar caramelizes. Serve immediately.
