Ingredients:
  • Live lobsters, 1 per person
  • A large pot of salted water
  • Butter
  • Bread for dipping into the lobster-infused butter (optional)
Instructions:
  • Fill a large pot 3/4 full of water and add a tablespoon of salt for every quart of water. Aim for a sea water-level of saltiness. Bring the water to a vigorous boil.
  • Gently place the live lobsters upside down into the pot of boiling water, covering it after adding all the lobsters.
  • Boil lobsters for 7 to 14 mins or longer, depending on size. Note the time the water reboils. For a 1-pound lobster, cook for 7-10 mins, 1 1/4-pound for 8-12 mins, and 1 1/2-pound for 10-14 mins. Add 2 mins for every additional 1/2 pound. Lobsters should be bright red. Larger lobsters might turn red before fully cooked, so time appropriately. Make sure lobster is opaque – undercooked isn't tasty, and overcooked will be rubbery. Keep a close eye on the time.
