Perfectly boiled chicken for any dish, a versatile and easy weeknight meal essential.
Ingredients:
  • 1 to 4 boneless, skinless chicken breasts (roughly 12 ounces each)
  • 1 teaspoon salt
  • Optional seasonings: smashed garlic, bay leaf, peppercorns, sliced ginger, sliced lemons or oranges, sliced onions or celery, fresh rosemary, fresh thyme
Instructions:
  • Arrange the chicken in a pan in a single layer, allowing for a slight overlap if needed.
  • Cover the ingredients with a generous inch of water, then add the salt and any desired seasonings for flavor.
  • Bring to a rolling boil over medium-high heat. As the water boils, foam may form on the surface, which you can skim off if desired. If not, it's perfectly fine to leave it be.
  • Simmer covered for 8 to 15 minutes: Reduce heat once boiling, cover, and let it cook until the chicken reaches 165°F with a thermometer or is cooked through when cut into. Check every minute until done.
  • Allow chicken to cool slightly, then shred or slice: Transfer the chicken from the broth to a plate or cutting board. Once manageable, shred or slice the chicken as desired.
