Indulge in Chef John's delectable sausage milk gravy - perfect with biscuits, fried chicken, or country-fried steak.
Ingredients:
  • 2 tablespoons butter
  • 8 ounces breakfast sausage links, casings removed and meat broken up
  • 4 strips bacon, sliced crosswise
  • 0.5 cup chopped green onions (light parts only)
  • 0.33333334326744 cup packed all-purpose flour
  • 1 pinch cayenne pepper, or to taste
  • salt and freshly ground black pepper to taste
  • 2.5 cups cold milk
  • 1 tablespoon chopped green onion
  • 1 pinch cayenne pepper for garnish
Instructions:
  • In a large skillet or saucepan over medium heat, melt butter and cook sausage and bacon until sausage is browned and bacon is almost crisp, about 10 minutes. Stir occasionally to break up the sausage. Add green onions and saute until soft, about 3 minutes.
  • Gradually incorporate 1 to 2 tablespoons of flour into the meat mixture until fully blended and the mixture has thickened. Cook and stir frequently for 2 to 3 minutes to cook off the raw flavor of the flour.
  • Gradually blend in milk to the meat mixture, whisking until smooth. Cook until the gravy thickens, stirring constantly for about 5 minutes. Increase heat to medium-high, simmer the gravy, then season with a pinch of cayenne pepper, salt, and black pepper. Lower the heat to medium-low.
  • Simmer gravy until flavors meld and reach desired thickness, about 10-15 minutes, stirring occasionally. Sprinkle with 1 tablespoon green onion and a pinch of cayenne pepper for garnish.
