Ingredients:
  • 150 g dried linguine
  • 200 g broccoletti or sprouting broccoli
  • 1 large higher-welfare sausage (125g)
  • 1 clove of garlic
  • 2 anchovy fillets in oil from sustainable sources
  • 1 pinch of dried red chilli flakes
  • 100 ml Frascati white wine
  • 20 g pecorino or Parmesan cheese
Instructions:
  • Prepare the pasta according to the package instructions in a pot of boiling salted water, then drain, saving a mugful of starchy cooking water. While the pasta is cooking, prepare the broccoletti by trimming and halving any thick stalks lengthways. Heat 1 tablespoon of olive oil in a large frying pan over medium heat. Remove the sausagemeat from the skin and crumble it into the pan using a wooden spoon. Once it turns lightly golden, add the peeled and roughly chopped garlic, anchovies, chilli flakes, broccoletti, and wine. Let it simmer while the pasta finishes cooking. Combine the drained pasta with the sausage mixture in the pan, grate the pecorino over it, and drizzle with extra virgin olive oil. Toss everything together, adding some reserved cooking water if necessary to achieve a creamy consistency. Season to taste, and serve immediately.
