Quick and flavorsome coarse-ground Dijon mustard recipe for sandwiches, burgers, hot dogs, and salads.
Ingredients:
  • 8 tablespoons (80 grams) whole brown mustard seeds
  • 7 ounces distilled white vinegar, divided
  • 4 ounces white wine
  • 1 tablespoon granulated sugar
  • 1 1/2 tablespoons salt
Instructions:
  • Place mustard seeds in a non-metal container filled with distilled white vinegar, then refrigerate for 12-24 hours. This step helps soften the seeds for easier blending later on.
  • Strain mustard seeds using a sieve, discard any vinegar to avoid bitterness.
  • Make homemade mustard: Combine strained mustard seeds, 1 1/2 ounces of distilled white vinegar, white wine, sugar, and salt in a blender. Blend on low for 20 seconds, then increase to high for 15 seconds. Scrape down the sides. Continue blending on low for 15 seconds, then increase to high for 20-30 seconds until thick like cake batter. For a smoother texture, blend for another 20-30 seconds at medium-high speed.
  • Enhancing mustard flavor: Store the freshly blended mustard in a glass jar or plastic container in the refrigerator for 24 hours. This resting period allows the bitterness to mellow.
