How to Make Fruit Leather

All-natural homemade fruit leather - pure perfection!
Ingredients:
  • Fresh fruit (apricots, peaches, plums, berries, apples, pears, grapes)
  • Water
  • Lemon juice
  • Sugar (if needed)
  • Spices such as cinnamon and nutmeg (optional)
Instructions:
  • Prepare the fruit: Wash the fruit thoroughly. Remove pits from stone fruit. Peel and core apples or pears, then chop. De-stem grapes. Taste the fruit to assess sweetness - no sugar needed if very sweet, add sugar if slightly tart.
  • Simmer and mash the fruit: In a large saucepan, combine the fruit with 1/2 cup of water per 4 cups of fruit. Simmer covered over low heat for 10 to 15 minutes until the fruit is tender. Uncover, then use a potato masher to mash the fruit in the pan.
  • Sweeten and flavor the fruit to your liking: Adjust the sweetness by gradually adding sugar, 1 tablespoon at a time. Brighten the flavor with lemon juice, adding 1 teaspoon at a time. Enhance the taste with a pinch of cinnamon, nutmeg, or spices of your choice. Stir and simmer until the added sugar dissolves and the fruit puree thickens, about 5-10 minutes.
  • Blend the cooked fruit into a silky purée using a food mill, chinoise, blender, or food processor until very smooth. Taste and add more sugar, lemon, or spices as needed.
  • Spread the purée evenly on a lined baking sheet: Line a rimmed baking sheet with microwave-safe plastic wrap and evenly spread the purée to a thickness of about 1/8 to 1/4 inch.
  • To dry out the purée: Preheat the oven to 140°F and place the baking sheet inside. Avoid letting plastic wrap touch the sides of the oven or the racks, ensuring it doesn't fold back over the purée. To expedite the process, utilize the convection setting. Allow the purée to dry in the oven for 8 to 12 hours, or overnight, until it forms fruit leather that is no longer sticky to the touch.
  • Wrap the fruit leather in plastic wrap and store: Once the fruit leather is ready, simply peel it off the plastic wrap. To store, wrap it in plastic wrap, place in an airtight container, and refrigerate or freeze. Enjoy the recipe? Leave a star rating and comment below!
