Switchel: A revitalizing ginger drink enjoyed by farmers for centuries, made with fresh ingredients like ginger, vinegar, water, and honey. Easy to whip up and perfect for summer.
Ingredients:
  • 2- to 3-inch piece fresh ginger
  • 2 1/4 cups water
  • 1/2 cup apple cider vinegar
  • 1/2 cup + 2 tablespoons honey
  • Sparkling or still water to finish
Instructions:
  • Peel the ginger using the side of a spoon, then slice it. You should end up with approximately 1/4 cup of sliced ginger.
  • To infuse the ginger, in a medium saucepan, bring 2 1/4 cups of water and the ginger to a boil. Remove from heat and let sit for 10 minutes. For a milder switchel, skip boiling the water; instead, combine water and ginger in a jar to infuse gently on the counter for a few hours.
  • In a quart-sized glass canning jar or other lidded glass container, mix the honey, vinegar, ginger, and water. Seal with a lid and shake well to combine.
  • Refrigerate: Cover the jar and chill until cold. Enjoy once cold or let the ginger infuse for up to 4 days to achieve desired taste. Strain out the ginger. For best results, consume within 7 days.
  • Serve the switchel by pouring it over ice in a glass. Enjoy it as is for a more concentrated and spicy flavor, or add still or sparkling water to mellow it out. Give it a gentle stir and savor every sip.
