Ingredients:
  • pan drippings from roasted chicken or 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken stock or broth
  • Salt and freshly ground black pepper to taste
Instructions:
  • Prepare all your flavorful ingredients.
  • Transfer the flavorful pan drippings to a large measuring cup, making sure to include all the delicious browned bits.
  • Separate and set aside the fat from the drippings.
  • Combine 1/4 cup of fat or butter in a medium saucepan and set over medium heat.
  • Gradually incorporate the flour while whisking non-stop, and cook for 1 to 2 minutes.
  • Combine stock or broth with the drippings in the measuring cup until you reach a total of 2 cups.
  • Gradually blend in the stock mixture until fully combined.
  • Stir over medium heat until thick and bubbly, stir for 1 more minute. Season with salt and pepper to taste.
