Turn homemade yogurt into rich Greek yogurt by straining with cheesecloth. Works for store-bought yogurt too!
Ingredients:
  • Plain yogurt, any amount, homemade or store-bought
Instructions:
  • Prepare the strainer by lining it with a double layer of cheesecloth and place it over the bowl.
  • Strain the yogurt: Place the yogurt in a strainer and allow the excess whey to drip out for 1 to 8 hours in the fridge for longer straining periods or in warm temperatures. Monitor the consistency and stop when desired.
  • Whisk until glossy: Vigorously whisk the strained yogurt until smooth and shiny. Use a strong whisking motion to achieve the desired texture. If the yogurt is too thick, incorporate whey gradually, a few tablespoons at a time. Put the mixture into a container for storage, where it can last for two weeks. Discard extra whey or refrigerate it separately for up to 2 months.
