Try steam-frying for a healthier, more delicious side dish than plain steamed veggies. Use any vegetable for a simple and quick weeknight meal accompaniment!
Ingredients:
  • 1 1/2 tablespoons olive oil
  • 8 ounces (1/2 of one medium head) cauliflower, cut into 1-inch florets
  • 8 ounces green beans, cut into 1-inch pieces
  • 8 ounces (3 medium) carrots, sliced 1/4 inch thick
  • 1/2  teaspoon salt
  • 1/4  cup water, stock, wine, or other liquid (see Note)
  • 2 tablespoons chopped parsley (optional)
Instructions:
  • Heat the olive oil in a large skillet until shimmering. Add the vegetables in a single layer, avoiding overcrowding. Sprinkle evenly with salt and cook in batches if needed.
  • Sauté the vegetables until they develop a golden brown color, approximately 5 minutes.
  • Add the water or liquid and cover the skillet. Allow the vegetables to steam until tender, usually around 4 minutes.
  • Check the vegetables by uncovering the pan and using a fork to test their tenderness. If they're done, cook them uncovered for another minute to evaporate any remaining liquid. If not done, add more liquid, cover, and steam a bit longer.
  • Once the vegetables are tender, transfer them to a serving dish. Finish with a sprinkle of parsley (if desired) and serve while hot.
