Tenderize flank steak with cuts, pan-fry in butter for juicy results, no marinating needed.
Ingredients:
  • 1 1/2 pound flank steak
  • Salt
  • Freshly ground black pepper
  • Dry mustard
  • Softened butter
Instructions:
  • Prepare the steak: Bring the steak to room temperature for 30 minutes. Trim off any tough connective tissue. Using a sharp knife, create shallow crisscross cuts on both sides of the steak, spacing them about an inch apart and following the direction of the grain. Be careful not to overlap the cuts.
  • Season one side of the steak with salt and pepper, then sprinkle with dry mustard (or regular mustard). Rub 1 tablespoon of butter over the seasoned side. Flip the steak and repeat the seasoning and butter rub on the other side.
  • Sear the steak in a hot cast iron pan for 2 to 3 minutes on each side until well browned, using tongs to flip.
  • Take the pan off the heat and allow the steak to rest for 5 to 10 minutes, utilizing the pan's remaining heat for cooking (if not using cast iron, reduce the heat to low).
  • To check for doneness, use your fingertips to gauge or insert a meat thermometer into the thickest part of the steak—120°F for very rare, 125°F for rare, or 130°F for medium rare. Serve flank steak rare or medium rare for optimal juiciness. If it's not done to your liking, return the steak and pan to medium high heat for a few minutes.
  • Allow the steak to rest: Take the steak out of the pan and place it on a cutting board. Cover it with aluminum foil and let it rest for 10 minutes.
  • Thinly slice the meat at an angle, cutting across the grain to break through tough muscle fibers.
  • Create a flavorful sauce: Pour any meat juices back into the pan. Place the pan over high heat and deglaze with a splash of water, scraping up any browned bits. Once the water has reduced, stir in about a tablespoon of butter for a luscious sauce. Arrange the sliced meat on a plate and drizzle the pan juices over it.
