Create New England steamers: tender, fun-to-eat soft shell clams steamed to perfection.
Ingredients:
  • 3 to 4 pounds of soft shell steamer clams
  • 1/2 cup butter, melted
Instructions:
  • Soaking the steamers: Place the steamers in a bucket and cover with sea water or salty water (1 tablespoon of sea salt per quart of water). Let sit in a cool place, preferably overnight. Clams will extend a foot from the shell. Change water if needed. Alternatively, soak several clams in salt water in a bowl, swirling gently for 30 seconds. Discard water if grit is released. Rinse clams until water is clear.
  • To steam the clams, in a tall pot, add 1 inch of water (beer or stout works too). Place a steamer rack in the pot and gently arrange the clams on top. If no rack, it's okay to put them directly in the water. Be cautious as you handle the delicate clam shells. Discard any clams that seem off. Cover the pot, bring to a boil, and steam for 5-10 minutes until shells open. Remove from heat, discard any unopened clams, and let cool briefly before serving. Watch out for any foaming while cooking. Enjoy!
  • Prepare your serving bowls: Gently transfer the cooked clams from the pot to a serving bowl. Reserve the flavorful clam broth in the pot and pour a splash into each serving bowl. Serve melted butter in small bowls for dipping.
  • Present with luscious melted butter on the side: Serve the steamers alongside a bowl for the clams, an empty bowl for the shells, a small bowl with broth for dipping, and a smaller bowl with butter for dipping.
  • To enjoy the steamers: Open the shell, remove the cooked clam, and peel off the skin covering the siphon. Discard shells into a bowl, then hold the siphon with your fingers. Swirl the clam in the hot broth to warm up and remove any grit. Dip the clam in melted butter and savor! The siphon may be slightly tough - it's optional to eat. It also makes a great dipping handle.
