Try this easy and delicious roasted spaghetti squash recipe!
Ingredients:
  • 1 spaghetti squash
Instructions:
  • Preheat your oven to a toasty 400°F.
  • Place the spaghetti squash on a secure surface lined with a dish towel for stability. Carefully slice the squash in half lengthwise from top to bottom using a sharp knife.
  • Remove the seeds: Simply scoop them out with a spoon and discard.
  • Prepare the squash for roasting: On a parchment-lined baking sheet, coat the squash with olive oil and sprinkle with salt, ensuring it's evenly seasoned on both sides.
  • Prepare the squash: Position the squash with the cut side facing downward and gently pierce the skin of both halves in multiple spots using a fork.
  • Roast the squash in the oven for 30 to 40 minutes until tender. When you can easily pierce through the skin and the flesh is soft, remove it and set it aside to cool for about 10 minutes, cut-side up.
  • Prepare the squash: Use a fork to scoop out the flesh from the skins. Discard the skins. The squash is now ready to be used or stored in the refrigerator for 3 to 4 days.
