Master the art of cooking flavorful and tender skirt steak with these quick and easy tips.
Ingredients:
  • 1 pound skirt steak
  • 1 teaspoon kosher salt, as needed for seasoning
  • 1/2 teaspoon ground black pepper, as needed for seasoning
  • 2 tablespoons olive oil
Instructions:
  • Cut the skirt steak into 2 or 3 smaller pieces, each 5 to 7 inches long, for better pan fitting and easier slicing later.
  • Pat the steaks dry with paper towels until very dry. Season each side generously with salt and pepper to enhance flavor and achieve a beautifully browned surface.
  • Preheat a 12-inch cast iron skillet over high heat for 3 minutes, then add the olive oil.
  • Sear the steak: Gently place the steak in the pan using tongs and press down to enhance contact. Sear the first side until browned, approximately 2 to 4 minutes based on thickness. Flip and cook for another 2 to 4 minutes. Achieve medium-rare by cooking until the steak reaches an internal temperature of 130°F. If necessary, work in 2 batches.
  • Allow the steak to rest: Place the steak on a cutting board, lightly cover with foil, and let it rest for 10 minutes before slicing.
