Honey sherry chicken with Chinese bean sauce, ginger, garlic, scallions, and spicy chiles.
Ingredients:
  • 1 tablespoon honey
  • 1 teaspoon black peppercorns
  • 2 tablespoons dark soy sauce
  • 2 tablespoons dry sherry
  • 6 boneless skinless chicken thighs, cut into chunks
  • 3 tablespoons vegetable oil
  • 1 tablespoon minced fresh ginger root
  • 1 tablespoon minced garlic
  • 1 tablespoon crumbled dried red chile pepper
  • 4 green onions, chopped
  • 1 teaspoon hot bean sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
Instructions:
  • Combine honey, peppercorns, salt, soy sauce, and sherry in a large bowl, then add the chicken and mix well to coat.
  • In a large skillet, heat the oil over medium-high heat until sizzling.
  • Sauté the ginger, garlic, red chile pepper, and green onions until fragrant in under 30 seconds. Introduce the chicken and soy sauce mix, fry for 3 minutes, then lower the heat, cover, and simmer until the chicken is fully cooked, about 5 to 10 minutes.
  • In a small bowl, combine the bean sauce, vinegar, and sesame oil. Pour the mixture over the chicken and stir well. Increase heat to high and cook for 1 minute. Serve hot.
