Classic Hungarian comfort food: Layered cabbage casserole with pork, rice, Savoy cabbage, sweet paprika, and sour cream topping.
Ingredients:
  • 1 (2 1/4 pound) head Savoy cabbage
  • 2 tablespoon vegetable oil, divided
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground pork
  • 1 tablespoon sweet paprika
  • Salt and freshly ground black pepper to taste
  • 1/3 cup water
  • 3/4 cup uncooked white rice
  • 2 cups sour cream
Instructions:
  • Prepare the cabbage leaves by separating, rinsing, and removing the tough ribs with a sharp knife. Boil a large pot of salted water, add cabbage leaves, and cook until tender for 15 to 20 minutes. Drain well before using.
  • Preheat your oven to 350 degrees F (180 degrees C) and generously grease an 8x11-inch baking dish.
  • Heat 1 tablespoon of vegetable oil in a skillet over low heat. Add onions, garlic, and a pinch of salt. Sauté until onions are soft and translucent, about 3 minutes, stirring occasionally.
  • Season the pork with paprika, salt, and pepper. Sear the pork for 5 minutes, stirring occasionally. Add water, cover, and simmer for 15 to 20 minutes or until most of the water has evaporated.
  • Heat 1 teaspoon of vegetable oil in a saucepan over medium heat. Add rice and toast until shiny, stirring frequently for about 1 minute. Add 1 1/2 cups of water and a pinch of salt. Bring to a boil, cover, and reduce heat to low. Simmer for 15 to 20 minutes until rice is tender and water is absorbed. Turn off the heat.
  • Prepare the baking dish by lining it with half of the cabbage. Layer half of the cooked rice on top of the cabbage, then add half of the cooked meat. Next, add another layer with half of the remaining cabbage, followed by the rest of the rice and meat. Finish by covering everything with the remaining cabbage and spreading sour cream evenly over the top.
  • Bake until the casserole is heated through and the sour cream starts to lightly brown, about 30-35 minutes in the preheated oven.
