Ice cream sandwiches

Make ahead freezer-friendly sandwiches for a convenient meal anytime.
Ingredients:
  • 40 g butter plus extra for greasing
  • 3 large free-range eggs
  • 90 g caster sugar
  • ½ teaspoon vanilla extract
  • 75 g plain flour
  • 40 g ground almonds
  • ½ teaspoon baking powder
  • 30 g flaked almonds
  • 5-6 tablespoons strawberry or raspberry jam
  • 1 litre block of vanilla ice cream
Instructions:
  • 1. Preheat the oven to 180ºC/gas 4 and line a 28cm x 35cm Swiss roll tin with greased greaseproof paper. 2. Brown the butter in a saucepan until golden and fragrant. Allow to cool. 3. Whisk eggs, sugar, and vanilla until tripled in volume and pale. 4. Stir together flour, almonds, baking powder, and salt, then fold into the egg mixture. 5. Gently fold in the cooled browned butter. 6. Pour batter into tin, sprinkle with flaked almonds. 7. Bake for 10-12 minutes until golden and springy. 8. Cool in the tin for a couple of minutes, then transfer to a wire rack to cool completely. 9. Cut out circles of cake with a 6cm cookie cutter. 10. Spread jam on half the cake circles. 11. Cut ice cream with the same cutter, sandwich between jammy cake circles. 12. Serve and enjoy!
