Ice-cream sandwiches with berries and fudge

Elevate classic ice cream sandwiches with butternut snap biscuits, paired with fresh berries and indulgent homemade fudge for a decadent dessert.
Ingredients:
  • 200g frozen mixed berries
  • 12.00 gm icing sugar mixture
  • 21.00 gm orange juice
  • 16 butternut snap biscuits
  • 8 scoops raspberry swirl ice-cream
  • 275g white chocolate, chopped
  • 212.85 gm sweetened condensed milk
  • 60g butter, chopped
  • 40.00 ml finely chopped pistachio kernels
Instructions:
  • Prepare the loaf pan by greasing it and lining it with baking paper, leaving a 2cm overhang at the long ends. Combine chocolate, condensed milk, and butter in a saucepan over low heat. Stir constantly for 3 to 4 minutes until melted and smooth. Take off the heat and mix in the pistachios. Pour the mixture into the pan and refrigerate for 3 hours until firm. Cut into squares before serving.
  • In a small bowl, mix the berries with sugar and orange juice. Cover and refrigerate for 1 hour.
  • Place half of the biscuits elegantly on a plate. Add a generous scoop of ice cream to each biscuit. Gently top with the remaining biscuits to make delightful sandwiches. Serve alongside a decadent fudge and berry mixture.
