Macaron Weis bar bites recipe

Elevate ice-cream sandwiches with colorful sprinkles and candies. Easy assembly with pre-made ingredients for a fun and delicious treat!
Ingredients:
  • 110g packet Assorted Macarons (see notes)
  • 4 x 280ml Weis Passionfruit & Coconut Ice Cream Bars or Weis Dairy Free Raspberry & Coconut Bars (see notes)
  • 55g (1⁄4 cup) each dark, milk and white chocolate melts, melted, cooled
  • Assorted sprinkles, to decorate
  • Desiccated coconut, to decorate
  • Coarsely crushed Kellogg’s Froot Loops cereal, to decorate
Instructions:
  • Prepare a tray lined with baking paper. Gently separate each macaron in half. Cut 10 discs from ice-cream bars using a 3.5cm round pastry cutter. Delicately assemble each disc between 2 macaron halves. Transfer to the lined tray and chill in the freezer for about 10 minutes, or until slightly firm.
  • Next, transfer the melted chocolate into individual bowls, and separate the toppings into their own individual bowls.
  • Dip each ice-cream sandwich in chocolate, coat with toppings, and place on a tray. Repeat with remaining sandwiches. Serve right away or freeze for up to 1 hour.
