Ice-cream with almond and panettone crumbs

Transform your panettone into a festive and easy Christmas treat.
Ingredients:
  • 150g panettone, crusts removed, torn
  • 55g brown sugar
  • 25g almond
  • 500ml vanilla ice-cream or chocolate ice-cream, softened slightly
  • 60ml amaretto
Instructions:
  • 1. Preheat the oven to 180C. 2. Pulse the panettone in a food processor until it becomes coarse breadcrumbs. 3. Line a baking tray with parchment paper. 4. Spread the crumbs on the tray, sprinkle in the sugar, and toss gently to mix. 5. Bake for 8 minutes, stirring occasionally until golden. 6. Add the almonds, coat them by tossing, and bake for another 2 minutes until lightly toasted. 7. Remove from the oven and let cool for 15 minutes before serving.
  • Combine half of the crumbs with the ice-cream by gently folding them together. Place back in the freezer for 30 minutes or until firm.
  • Divide the ice-cream into serving bowls and generously drizzle with amaretto. Top with the remaining crumbs and serve right away.
