Iced Lemon Shortbread Bars

Lemon-infused buttery shortbread.
Ingredients:
  • 3/4 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1 cup butter or margarine, slightly softened
  • 2 tablespoons grated lemon peel
  • 1/4 cup lemon juice
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 2 cups powdered sugar
  • 2 teaspoons light corn syrup
  • 1 teaspoon grated lemon peel
  • 3 to 4 tablespoons lemon juice
Instructions:
  • Preheat oven to 325°F (or 300°F for dark or nonstick pan). Grease a 13x9-inch pan with shortening or cooking spray.
  • In a large bowl, use an electric mixer to beat together 3/4 cup powdered sugar, granulated sugar, and butter until combined and fluffy. Mix in 2 tablespoons lemon peel and 1/4 cup lemon juice. Stir in flour, cornstarch, and salt. Press dough into pan using floured fingers.
  • Bake for 35 to 45 minutes until the top is a lovely light golden brown. Allow to cool completely for about 45 minutes.
  • In a medium bowl, mix all Lemon Icing ingredients until smooth. Spread the cooled bars with the Lemon Icing and allow it to set for 15 minutes. Cut the bars into 6 rows by 6 rows.
