Delicious lemon slice with buttery shortbread base - ideal for tea time.
Ingredients:
  • 250g butter, softened
  • 3 tsp finely grated lemon rind
  • 4.40 gm vanilla extract
  • 150.00 gm icing sugar mixture
  • 1 egg
  • 500.00 ml plain flour
  • Lemon zest, to decorate
  • 150g butter, softened
  • 2 tsp finely grated lemon rind
  • 450.00 gm icing sugar mixture
  • 31.50 gm lemon juice
Instructions:
  • Preheat your oven to 170C/150C fan-forced. Grease an 18cm x 28cm slice pan and line the base and sides with baking paper, leaving a 2cm overhang on all sides.
  • With an electric mixer, whip together butter, lemon rind, and vanilla until airy and smooth. Slowly incorporate icing sugar until fully blended. Add egg and mix until combined. Gradually mix in flour in two parts. Spread the mixture over the base of the pan, then use damp hands to evenly press it down.
  • Bake for 20 to 25 minutes until edges are golden and top is firm. Allow to cool completely in the pan.
  • Using an electric mixer, whip up butter and lemon rind until fluffy. Slowly blend in icing sugar until creamy. Mix in lemon juice. Frost the slice with the icing, sprinkle with lemon zest, cut into pieces, and serve.
