Irresistible iced oatmeal cookies with raisins and pecans for a satisfying treat.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 2 sticks unsalted butter, at room temperature
  • 1 cup packed light brown sugar
  • 0.25 cup white sugar
  • 2 large eggs
  • 1.5 teaspoons vanilla extract
  • 2.75 cups old-fashioned rolled oats
  • 1 cup raisins
  • 0.5 cup chopped toasted pecans
  • 2 cups powdered sugar
  • 2 tablespoons unsalted butter, at room temperature
  • 1 tablespoon apple juice, or more to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C, placing racks in the top and bottom thirds. Line 2 cookie sheets with silicone liners (such as Silpat®).
  • In a medium bowl, combine flour, baking soda, cinnamon, and salt, whisk together.
  • In a large bowl, mix butter, brown sugar, and white sugar until creamy using an electric mixer on medium-high speed for about 2 minutes. Incorporate eggs and vanilla, beating for about 1 minute until blended. Add dry ingredients and mix on low speed until blended. Finally, gently mix in oats, raisins, and pecans on low speed until combined.
  • Use a 2-inch cookie scoop to place dough on the cookie sheets, ensuring they are 2 inches apart.
  • Bake in the preheated oven, rotating halfway, until cookies are light golden brown, 10 to 12 minutes. Transfer to wire rack and cool completely, about 30 minutes.
  • As the cookies bake, mix powdered sugar, butter, and 1 tablespoon apple juice in a bowl until smooth. Adjust consistency with additional juice for perfect drizzling.
  • Drizzle the icing over the cooled cookies and allow it to set for about 30 minutes before serving.
