Iced rum tea

Ingredients:
  • 6 Earl Grey tea bags or 2 tbsp loose-leaf tea
  • 220g caster sugar
  • 250.00 ml mint leaves, plus extra to serve
  • 375ml rum
  • Ice cubes, to serve
Instructions:
  • - Bring 2 litres of water to a boil, then steep the tea bags and let it cool. - Combine sugar and 2 cups (500ml) of water in a saucepan, stirring over low heat until sugar dissolves. - Increase heat to high, boil for 2 minutes, then take off heat and add mint leaves to cool.
  • Pour the syrup into the tea mixture, strain into a tall jug, and refrigerate. When serving, mix in rum, plenty of ice, and garnish with extra mint leaves.
