Indulge in a refreshing rum-spiked iced tea for the ultimate summer treat.
Ingredients:
  • 750ml (3 cups) boiling water
  • 40.00 gm caster sugar
  • 3 spearmint & chamomile tea bags
  • 185ml (3/4 cup) gin
  • 80ml (1/3 cup) white rum
  • 80ml (1/3 cup) Drambuie
  • 60ml (1/4 cup) fresh lemon juice
  • Ice cubes, to serve
  • Fresh mint leaves, to serve
Instructions:
  • In a medium heatproof bowl, mix together water, sugar, and tea bags. Let it infuse for 30 minutes, then chill in the fridge for another 30 minutes.
  • In a serving jug, mix together the gin, rum, Drambuie, and lemon juice. Add ice, mint, and tea mixture, then stir to blend. Pour into glasses and serve right away.
