Raspberry and spearmint iced tea

Ingredients:
  • 200g frozen raspberries, thawed
  • 55g caster sugar
  • 4 peppermint tea bags
  • 125.00 ml spearmint leaves
  • crushed ice, to serve
Instructions:
  • Combine fresh juicy raspberries with a touch of sugar in a spacious heatproof jug. Let it sit for 10 minutes, giving it an occasional gentle stir until the sugar completely dissolves.
  • In a heatproof jug, steep teabags in 1L of boiling water for 5 minutes. Mix peppermint tea into the raspberry mixture and stir gently. Strain the mixture, saving a few raspberries, and let it cool to room temperature.
  • Mix in fresh spearmint leaves and allow the flavors to meld in the refrigerator. Serve the refreshing dish cold alongside the saved raspberries and crushed ice.
