Delicious summer cobbler bursting with fresh raspberries and blueberries. Perfect with ice cream or whipped cream.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup white sugar
  • 6 tablespoons butter
  • 0.25 cup boiling water
  • 2 tablespoons cornstarch
  • 0.25 cup cold water
  • 2 cups fresh blueberries
  • 1.5 cups fresh raspberries
  • 1 tablespoon lemon juice
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C), then elegantly line a baking sheet with aluminum foil.
  • Prepare the topping by combining flour, sugar, baking powder, and salt in a bowl. Mix in the butter until crumbly, then add boiling water and stir until a dough forms.
  • Prepare the filling by mixing cornstarch with water in a large bowl. Add blueberries, raspberries, sugar, and lemon juice. Transfer to a cast iron skillet and bring to a boil, stirring regularly. Drop spoonfuls of topping onto the skillet before placing it on a baking sheet.
  • Bake in the oven until the topping is beautifully golden brown, around 25 minutes.
