Transform Idahoan Mashed Potatoes into a decadent Molten Lava Cake.
Ingredients:
  • 4 ounces bittersweet chocolate, broken into small pieces
  • 4 ounces semisweet chocolate, broken into small pieces
  • 0.25 cup unsalted butter, cut into small pieces
  • 4 eggs
  • 0.5 cup sugar
  • 0.25 cup Idahoan® Boxed Original Mashed Potatoes, dry
  • 1 tablespoon unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 1 teaspoon instant espresso powder
Instructions:
  • Preheat your oven to 375°F.
  • Generously coat six 6 oz ramekins with nonstick cooking spray and place them on a baking sheet.
  • Melt the chocolate and butter together using a double boiler.
  • If you don't have a double boiler, place a medium stainless steel bowl over a small saucepan with water. Be careful not to let any water get into the melting chocolate.
  • Take it off the heat and let it cool.
  • Beat eggs in a large mixing bowl with a hand mixer until foamy, for several minutes.
  • Combine sugar, dry mashed potatoes, cocoa powder, vanilla extract, espresso powder, and salt. Beat for a couple of minutes until well mixed.
  • Pour in the melted chocolate mixture and whip vigorously for five minutes. Incorporating plenty of air will create a delightfully light and fluffy cake.
  • Carefully transfer the batter into individual ramekins ensuring not to under bake or over bake the cakes. Bake in the oven for 15 to 17 minutes, keeping a close watch to achieve a molten texture in the center without overcooking.
  • Allow the dish to rest briefly before serving to enhance its flavors, and don't be concerned if the center sinks slightly.
  • Use a thin knife to gently release the cakes from the edges.
  • Sprinkle with powdered sugar and dollop with whipped cream.
