Transform Impossible burger with savory Italian seasonings, then stuff into zucchini boats for a flavorful vegetarian dish.
Ingredients:
  • 5 medium zucchini
  • 1 (12 ounce) package Impossible Burger
  • 0.66666668653488 cup Italian-seasoned bread crumbs
  • 0.33333334326744 cup diced fresh tomato
  • 0.33333334326744 cup minced Pecorino-Romano cheese
  • 1 large egg
  • 2 large cloves garlic, crushed
  • 2 tablespoons chopped flat-leaf (Italian) parsley
  • 1 tablespoon minced onion
  • 0.25 teaspoon ground black pepper
  • 0.25 cup shredded mozzarella cheese
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Prepare the zucchini by trimming the ends and cutting them in half lengthwise. Use a small spoon to scoop out the seedy flesh, ensuring to leave about 1/2 inch of flesh on the bottom and sides. Discard the scraped-out flesh and arrange the hollowed zucchini halves in a 10x15-inch pan.
  • In a medium bowl, mix together meatless ground beef, tomato, bread crumbs, Pecorino-Romano cheese, egg, garlic, parsley, onion, salt, and pepper until well combined using clean or gloved hands.
  • Fill the zucchini with the mixture until fully stuffed, then generously top with shredded mozzarella.
  • Bake in the oven until golden brown and zucchini is tender, about 35 to 40 minutes.
