Cheesy Meatless Stuffed Shells

Cheesy Impossible™ Burger stuffed shells - a meatless delight!
Ingredients:
  • 18 jumbo pasta shells
  • 1 (12 ounce) package meatless ground beef substitute (such as Impossible(TM) Foods)
  • 1 (15 ounce) can fire-roasted diced tomatoes
  • 0.5 medium onion, diced
  • 2 teaspoons minced garlic
  • 1 tablespoon Italian seasoning
  • 3 cups loosely packed fresh spinach
  • 1 (15 ounce) container ricotta cheese
  • 1 large egg, beaten
  • 1 (24 ounce) jar marinara sauce
  • 1 cup shredded Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 0.25 teaspoon Italian seasoning, or to taste
Instructions:
  • Preheat the oven to 375F (190C).
  • 1. In a large pot of boiling salted water, cook the shells until al dente, stirring occasionally, for about 9 minutes.
  • While the shells are cooking, warm up olive oil in a large pan over medium-high heat. Cook meatless ground beef until browned, about 2 to 3 minutes. Stir in tomatoes, onion, garlic, 1 tablespoon Italian seasoning, salt, and pepper. Let simmer for 2 minutes, then add spinach and continue simmering until wilted, around 2 minutes. Adjust seasoning if necessary, then take off the heat and blend in ricotta cheese and egg until well combined.
  • Spread 1/2 cup marinara sauce evenly in a 12-inch cast iron skillet or a 9x13-inch baking dish using the back of a large spoon.
  • After cooking the shells, fill each one with a generous 1 1/2 tablespoons of the "meat" mixture, then place them in a skillet or baking dish. Cover them with the remaining marinara sauce, top with Parmesan and mozzarella cheeses, and sprinkle with the remaining Italian seasoning and a bit more black pepper.
  • Bake in the oven until the cheese is golden and bubbly, for 35 to 45 minutes.
