Overnight breakfast casserole: Prep in 20 mins, refrigerate overnight, bake in the morning. Great for feeding a crowd before noon!
Ingredients:
  • 1 1/2 lb bulk pork sausage
  • 1 cup chopped bell pepper (any color)
  • 1/2 cup chopped onion
  • 3 cups frozen hash brown potatoes
  • 2 cups shredded cheddar cheese (8 oz)
  • 1 cup Bisquick™ Original Pancake & Baking Mix
  • 2 cups milk
  • 1/4 teaspoon pepper
  • 4 eggs
Instructions:
  • Preheat oven to a toasty 400°F and generously grease a 13x9-inch (3-quart) baking dish.
  • Cook the sausage, bell pepper, and onion in a 12-inch skillet over medium heat for 10 to 12 minutes until the sausage is no longer pink. Drain the mixture and combine it with potatoes and 1 1/2 cups of cheese in a baking dish.
  • Combine all remaining ingredients, excluding the remaining cheese, in a medium bowl using a fork or wire whisk. Transfer the mixture into a baking dish.
  • Bake uncovered for 38 to 43 minutes until a knife inserted in the center comes out clean. Sprinkle with the rest of the cheese and bake for an additional 1 to 2 minutes until the cheese is melted. Allow it to stand for 5 minutes before serving.
