Impossibly Easy Chicken Club Pie

Make a quick and delicious Chicken Club Pie using Bisquick® Gluten Free mix in just 10 minutes!
Ingredients:
  • 1 1/2 cups diced cooked chicken
  • 1/4 cup diced cooked ham
  • 4 slices gluten free bacon, crisply cooked, crumbled
  • 1 cup gluten free shredded mozzarella cheese (4 oz)
  • 1/2 cup Bisquick™ Gluten Free mix
  • 1 cup milk
  • 3 eggs, beaten
  • 1/2 cup gluten free light Caesar dressing
  • 2 cups shredded romaine lettuce
  • 1 cup cherry tomatoes, cut in half
Instructions:
  • Preheat oven to 400°F. Generously spray a 9-inch glass pie plate with cooking spray (without flour). Arrange layers of chicken, ham, bacon, and cheese in the pie plate.
  • In a medium bowl, combine Bisquick mix, milk, eggs, and 1/4 cup of dressing, stirring with a whisk or fork until smooth. Pour the mixture over the ingredients in the pie plate.
  • Bake for 25 to 30 minutes until a knife inserted in the center comes out clean, then allow it to rest for 5 minutes.
  • In a medium bowl, combine lettuce and tomatoes with the remaining 1/4 cup of dressing. Serve by cutting the pie into wedges and topping each wedge with the lettuce mixture.
