Indulge in a quick and easy gluten-free peach-raspberry pie made with Bisquick® Gluten Free mix!
Ingredients:
  • 1 bag (12 oz) frozen sliced peaches, thawed, patted dry and cut into 3/4-inch pieces
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup fresh raspberries
  • 1/2 cup Bisquick™ Gluten Free mix
  • 1/3 cup whipping cream
  • 2/3 cup sugar
  • 2 eggs, beaten
  • 1 teaspoon pure almond extract
  • 2 tablespoons Bisquick™ Gluten Free mix
  • 1/4 cup sugar
  • 2 tablespoons cold butter
  • 1/2 cup slivered almonds
Instructions:
  • Preheat your oven to 350°F and generously coat a 9-inch glass pie plate with non-stick cooking spray (without flour).
  • Combine peaches, cinnamon, and nutmeg in a medium bowl. Transfer mixture to a pie plate and top with raspberries. In a separate small bowl, whisk together 1/2 cup Bisquick mix, whipping cream, 2/3 cup sugar, eggs, and almond extract until well combined. Pour the batter over the fruit. Bake for 10 minutes until golden. Enjoy!
  • In a separate small bowl, combine 2 tablespoons Bisquick mix and 1/4 cup sugar. Use a pastry blender or fork to cut in 2 tablespoons butter until the mixture is crumbly. Mix in almonds and sprinkle the topping over the pie.
  • Continue baking for an additional 30 to 35 minutes, or until a knife inserted in the center comes out clean and the topping is golden brown. Allow to cool on a rack for at least 1 hour before serving. Store covered in the refrigerator.
