Try this quick and delicious dinner recipe for a new favorite meal.
Ingredients:
  • 3 1/3 cups Original Bisquick™ mix
  • 1 tablespoon vegetable or olive oil
  • 2 cups chopped green, red and/or yellow bell pepper (2 large)
  • 2 cups cut-up cooked chicken
  • 1 cup thick & chunky salsa
  • 1 teaspoon chili powder
  • 2 cups shredded Colby-Monterey Jack cheese blend (8 oz)
  • 1/2 cup sour cream
  • 2 tablespoons fresh cilantro
  • Additional salsa, if desired
Instructions:
  • Preheat your oven to 375°F. Grease a 13x9-inch (3-quart) glass baking dish with cooking spray. In a medium bowl, mix Bisquick™ mix and milk until a soft dough forms. Spoon half of the dough evenly into the baking dish by tablespoonfuls (it won't fully cover the bottom).
  • Heat oil in a nonstick skillet over medium heat. Add bell peppers and cook for 2 to 3 minutes until slightly crisp. Remove from heat, then stir in chicken, salsa, and chili powder.
  • Layer the chicken mixture over the dough and generously sprinkle with 1 cup of cheese. Repeat the layers with the remaining dough, chicken mixture, and cheese.
  • Bake until golden brown and biscuits in center are cooked (25-30 minutes). Garnish with sour cream, fresh cilantro, and extra salsa before serving.
