Cheesy potato casserole with creamy mushroom soup and green onions, topped with crisp hash browns for a delicious twist.
Ingredients:
  • 6 medium potatoes
  • 0.25 cup butter
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 pint sour cream
  • 0.33333334326744 cup chopped green onion
  • 1.5 cups shredded Cheddar cheese
  • 0.5 cup crushed cornflakes cereal
  • 2 tablespoons melted butter
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 2 1/2-quart casserole dish.
  • Boil whole, unpeeled potatoes in a large pot of water for 25 to 30 minutes. Drain the potatoes and let them cool. Peel and grate the potatoes into a medium bowl.
  • In a large skillet over medium heat, melt 1/4 cup of butter until sizzling. Stir in the soup and cook until it starts to bubble. Remove from heat, then blend in sour cream, green onion, and cheese. Add the potatoes and transfer the mixture to a casserole dish.
  • Combine cornflake crumbs and melted butter in a resealable bag, then sprinkle the mixture over the casserole.
  • Place in a hot oven for 45 minutes.
