Flavorful Indian lentils and spinach, spiced with cardamom, ginger, and cinnamon, creating a hearty dish.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 white onion, halved and sliced into 1/2-inch rings
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup lentils
  • 0.5 cup water
  • 2 cloves garlic, crushed
  • 1.5 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.25 teaspoon ground turmeric
  • 0.25 teaspoon ground cloves
  • 0.125 teaspoon cayenne pepper
  • 1 bay leaf
  • 1 (10 ounce) package frozen chopped spinach
  • 0.25 cup water
Instructions:
  • In a heavy pan over medium heat, sauté onions in oil until they start to turn golden brown, about 10 minutes. Add minced garlic and cook until fragrant, about 1 minute.
  • Combine the chicken broth, lentils, 1/2 cup water, crushed garlic, coriander, salt, cumin, chili powder, ginger, turmeric, cloves, cayenne pepper, and bay leaf with the onion mixture and bring to a boil. Cover and simmer over medium-low heat for about 35 minutes until the lentils are soft.
  • Microwave spinach in a bowl with 1/4 cup water for 5 minutes. Stir and heat for an extra 5 minutes until warmed through. Allow to cool for 5 minutes, then drain and squeeze out excess water.
  • Combine fresh spinach with the lentils, cover, and gently simmer for approximately 10 minutes until heated through.
