Savor my unique Indian-inspired dish, delicious over rice or a baked potato. Perfect with carrots, cauliflower, or fresh tomato slices for a satisfying meal.
Ingredients:
  • 2 white onions, halved and sliced into 1/2 rings
  • 0.5 cup lentils
  • 2 cups water
  • 1 (10 ounce) package frozen spinach
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • freshly ground black pepper to taste
  • 2 cloves garlic, crushed
Instructions:
  • In a heavy pan over medium heat, let the oil shimmer before adding the onion. Cook for about 10 minutes until it starts to caramelize. Stir in the minced garlic and saute for an additional minute.
  • Combine lentils and water in a saucepan and bring to a boil. Cover, reduce heat, and simmer for about 35 minutes until lentils are soft. Timing may vary based on the lentils and amount of water used.
  • Microwave the spinach according to package directions, then add it along with salt and cumin to the saucepan. Cover and simmer for about ten minutes until everything is heated through. Season generously with freshly ground pepper and add extra garlic to taste.
