Ingredients:
  • 2 cups uncooked brown rice
  • 6 cups water
  • 1 tablespoon olive oil
  • 1 large white onion, chopped
  • 4 cloves garlic, minced
  • 3 tablespoons grated fresh ginger root
  • 1 (28 ounce) can diced tomatoes with juice
  • 0.125 teaspoon cayenne pepper
  • 1 cup chunky natural peanut butter
Instructions:
  • In a large saucepan, bring rice and water to a boil. Cover, reduce heat to low, and simmer for about 30 minutes until rice is tender and water is absorbed.
  • In a large saucepan over medium-low heat, heat olive oil. Add onion and cook until soft and golden, stirring frequently. Add garlic and ginger, cook until fragrant, about 5 minutes. Mix in tomatoes, season with cayenne pepper, increase heat to medium, and gently simmer. Stir in peanut butter and heat until thickened. Serve over rice.
